Ingredients

(makes about 11 cups)

  •  6 cups chicken broth
  • 3 cups cooked basmati rice
  • 2 cups diced chicken
  • 2 cups diced tomatoes
  • 2 cups black beans, rinsed and drained
  • 2 cups cooked yellow corn
  • 1/2 cup diced onion
  • 1 /2 cup diced green bell pepper
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 teaspoon cumin
  • fat-free cooking spray

Directions

  1. Coat bottom of a large pot with fat-free cooking spray and bring to medium heat.  Add onions and peppers.
  2. Cook for about 5 minutes, stirring occasionally until onions start to become translucent.
  3. Add in broth, tomatoes, corn, beans, chicken, and spices.
  4. Cook for about 20 minutes, reduce to low, add in rice, and simmer for about 10 minutes.
  5. Remove from heat.  Serve and enjoy with or without sour cream and shredded cheese for a flavorful, nutritious meal in a bowl!
