(makes about 2.5 cups)

  • 1 medium head of cauliflower
  • ½ cup part-skim shredded cheddar cheese
  • Salt to taste


  1. Wash cauliflower and cut off main stalk.
  2. Dice cauliflower florets and stems into very small pieces.
  3. Add ~1 cup water to pan over high heat.
  4. Bring water to a rolling boil and add cauliflower pieces.
  5. Add additional water until diced cauliflower is slightly submerged.
  6. Lower to medium heat and stir frequently.
  7. Use whisk to continue to dice cauliflower into smaller pieces while cooking.

    Continue to dice cauliflower pieces with whisk while cooking.

  8. Once water is nearly cooked away, add in cheese and bring to low heat.
  9. Simmer until cauliflower cheesy rice starts to thicken.
  10. Serve and enjoy!
